Keto Bisquick Zucchini Bake
This simple, old-fashioned bake tastes like something from my childhood recipe box. It’s versatile and satisfying — serve it warm for breakfast, slice it for a light lunch, or pair it with a salad for dinner. I kept this recipe in my grandmother’s collection for years but hesitated because of the Bisquick called for. Once I discovered an easy low-carb Bisquick substitute, it became a regular in my kitchen. It’s also a great way to use up an abundant zucchini harvest.

Ingredients for a low-carb zucchini bake
- 4 strips cooked bacon, broken into pieces
- 3 cups grated zucchini
- 1/4 cup finely chopped onion
- 4 eggs, beaten
- 1/4 cup avocado or olive oil
- 1 cup low-carb baking mix (see notes)
- 1 cup grated cheese, divided
- 1/4 tsp salt
- 1/4 tsp pepper

A comforting combination of zucchini, onion, bacon and cheese that’s naturally low in carbs when made with a low-carb baking mix. It reheats well and freezes nicely in portions for meal prep.
Ingredients
- 4 strips cooked bacon, broken into pieces
- 3 cups grated zucchini
- 1/4 cup finely chopped onion
- 4 eggs, beaten
- 1/4 cup avocado or olive oil
- 1 cup low carb baking mix (see notes)
- 1 cup grated cheese
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the grated zucchini, chopped onion, cooked bacon pieces, beaten eggs, oil, low-carb baking mix, salt and pepper. Stir in half of the grated cheese until evenly distributed.
- Pour the mixture into a greased 9-inch pie pan or similar baking dish and smooth the top.
- Sprinkle the remaining cheese evenly over the top.
- Bake for about 30 minutes, or until the top is golden brown and bubbly and a knife inserted near the center comes out clean. Let rest a few minutes before slicing.
Notes
To keep this recipe low carb and gluten free, use a commercial low-carb biscuit or pancake mix, or make a homemade low-carb “Bisquick” using almond flour and other keto-friendly ingredients. Nutrition facts here are based on a homemade low-carb Bisquick substitute.
