Coconut Lime Cream Cheese Fruit Dip

Ingredients

  • 8 ounces cream cheese softened to room temperature
  • 15 ounces cream of coconut –NOT coconut milk– This is found in the drink mixer aisle.
  • 2 tablespoons fresh lime juice more to taste
  • 7 ounces marshmallow cream
  • 8 ounces whipped topping Cool Whip or Similar

Instructions

  • Beat the cream cheese in a medium bowl with an electric mixer until very smooth. Gradually add the cream of coconut, mixing and scraping the bowl so the mixture becomes silky. Add the lime juice and mix until combined.
  • Stir in the marshmallow cream until evenly incorporated. Using a spatula, gently fold in the whipped topping until the dip is light and uniform.
  • Chill the dip for at least 1 hour to thicken and let flavors meld. Garnish with shredded coconut and lime wedges if desired, then serve with fresh fruit.

The Indulgent Life

We’re three weeks into summer break. The days have been equal parts chaos and celebration—plenty of cake and creative dress-up, oversized cinnamon rolls, and a lot of laughter at home.

Recently my four-year-old decided to start a toddler Village People cover band. We marked the occasion with cake and a chat about how clothes influence first impressions. He handled it like a pro.
