  • Vegan marshmallows — I used Dandies, and their seasonal peppermint marshmallows are great here. Plain vegan marshmallows plus a touch more peppermint extract also work.
  • Peppermint extract — a little goes a long way; just enough to give a pleasant minty note.
  • Candy canes — crushed candy canes or peppermint candies mixed in and sprinkled on top add crunch and festive color.
  • White chocolate — optional, but a white chocolate drizzle looks pretty and pairs nicely with the mint.
  • Vegan butter — helps bind the marshmallow mixture; choose a quality vegan butter to avoid any greasy aftertaste.

Candy Cane Rice Krispie Treats

A quick, festive treat combining classic rice krispie bars with peppermint and crushed candy canes.

Ingredients

  • ¼ cup vegan butter
  • 3 cups vegan marshmallows + 1 cup for later (optional: use peppermint marshmallows)
  • ¼ teaspoon peppermint extract
  • 7 cups crispy rice cereal
  • ¼ cup crushed candy cane pieces
  • ¼ cup vegan white chocolate chips

Instructions

  • Prepare a 9 x 13 pan by spraying with nonstick spray or coating with vegan butter. Set aside.
  • In a large pot over medium-low heat, melt the vegan butter. Add 3 cups of marshmallows and stir until melted, about 5–7 minutes.
  • Stir in the peppermint extract, then add the crispy rice cereal. Fold until well combined. Stir in the reserved 1 cup of mini marshmallows and the crushed candy canes.
  • Press the mixture firmly into the prepared pan and let it cool slightly to set.
  • Melt the ¼ cup vegan white chocolate, transfer to a small bag, snip a corner, and drizzle over the bars. Sprinkle additional crushed candy canes on top if desired.
  • Once the bars have cooled and set, cut into squares and enjoy.
