Green Chili Sauce (Aji Verde)

  1. Place all sauce ingredients in a food processor or blender and puree until smooth. Add more water as needed to reach the consistency you prefer. Taste and adjust salt, lemon, or jalapeño heat as desired.

  1. Place cilantro and 1/4 cup water in a food processor or blender and puree. Set aside.
  2. In a medium bowl, toss chicken pieces with ground cumin, salt, and pepper.
  3. Heat olive oil in a large sauté pan over medium heat. Add the chicken and brown on both sides; transfer to a plate and set aside.
  4. In the same pan, add garlic, onion, red pepper, and carrots. Sauté about 3 minutes until softened, then add the cabbage and cook another minute.
  5. Rinse the rice and quinoa thoroughly (at least three times) and drain. Place rice and quinoa in a rice cooker. Add the beer, 1 cup water, pureed cilantro, sautéed vegetables, and the browned chicken. Cook using the white rice setting. When cooking finishes, add the frozen peas, close the cooker for a few minutes to let them heat through, then fluff the rice and quinoa to combine.
  6. Serve portions topped with Green Chili Sauce.
