Ingredients

  • 1 zucchini, sliced lengthwise
  • Olive oil
  • Salt and pepper
  • 8 ounces fresh mozzarella, sliced
  • 1 large tomato, sliced
  • Basil leaves
  • Balsamic glaze
  • 4 Cracked Wheat Kaiser Rolls

Instructions

  • Preheat a grill to medium-high or heat a grill pan over medium-high on the stovetop. Brush zucchini slices with olive oil and season with salt and pepper. Grill the zucchini for 2 to 3 minutes per side, until tender and slightly charred.
  • Assemble the sandwiches by layering grilled zucchini, sliced fresh mozzarella, a slice of tomato and basil leaves on the Kaiser rolls. Drizzle balsamic glaze to taste and serve immediately.

Notes

Grilled zucchini may be substituted with red peppers or eggplant. Add grilled onions for extra flavor, or include a piece of grilled chicken for a heartier sandwich.
