
I’m excited to share a quick and simple summer recipe featuring fresh flavors and easy grilling. This vegetarian take on a classic Caprese is bright, satisfying, and ready in under 20 minutes.

Summer means long sunny days, cold drinks and meals cooked outdoors. I love easy grilling recipes that let vegetables shine, and this grilled zucchini Caprese sandwich does just that. It’s light, fresh, and perfect for warm-weather lunches or casual dinners.

Choosing the right bread matters — it makes the sandwich. For this recipe I used Cracked Wheat Kaiser Rolls, which hold up well to the grilled zucchini and mozzarella while adding a pleasant nutty texture.

Brush zucchini slices with olive oil and season with salt and pepper before grilling. If you prefer, you can substitute eggplant or red peppers for the zucchini.

Grilled vegetables are one of my favorite sides in summer — they add smoky depth and pair beautifully with fresh mozzarella and tomato.

Ingredients
- 1 zucchini, sliced lengthwise
- Olive oil
- Salt and pepper
- 8 ounces fresh mozzarella, sliced
- 1 large tomato, sliced
- Basil leaves
- Balsamic glaze
- 4 Cracked Wheat Kaiser Rolls

Preheat a grill to medium-high or heat a grill pan over medium-high on the stovetop. Brush zucchini slices with olive oil and season with salt and pepper. Grill the zucchini for 2 to 3 minutes per side, until tender and slightly charred.

Assemble the sandwiches by layering grilled zucchini, sliced fresh mozzarella, a slice of tomato and basil leaves on the Kaiser rolls. Drizzle balsamic glaze to taste and serve immediately.
