Quick 4-Ingredient Guacamole Recipe

This is my favorite quick guacamole recipe — simple, reliable, and ready in about ten minutes. It uses just four fresh ingredients: ripe avocados, fresh lime juice, finely diced red onion, and kosher salt. The result is creamy, bright, and versatile: perfect for scooping with chips, spooning over tacos, or serving alongside grilled meats and vegetables at a summer cookout.

This version intentionally skips cilantro. If you dislike the herb or are serving people who find it soapy, the clean lime-and-avocado flavors really stand on their own here. If you love cilantro, you can easily stir in a small handful at the end, but I often leave it out so the avocado and lime can take center stage.

Gluten-free by nature, this guacamole is naturally vegetarian and dairy-free as well. The texture is up to you — mash until mostly smooth or leave it chunky for more bite. Below you’ll find tips for selecting avocados, storing leftovers, and keeping your guacamole green in the fridge.

Ingredient Notes

  • Avocados – Choose fruit that yields slightly when pressed gently near the stem. Firm avocados need more time to ripen; soft, slightly yielding ones are ready to mash. If buying in advance, keep firmer avocados on the counter until ripe.
  • Fresh lime juice – The brightness of fresh lime is important here. One medium lime yields roughly 2 tablespoons of juice. If you don’t have lime, fresh lemon juice can be substituted in a pinch but the flavor will change slightly.
  • Red onion – Finely dice the onion so each bite has a little crunch without overwhelming the avocado. If raw onion tastes too sharp, soak the diced pieces in cold water for 10 minutes, then drain well before adding. White onion can also be used.
  • Salt – Start with the recommended amount, then taste using a tortilla chip; because chips are salted, tasting with them gives a better sense of the final seasoning than sampling with a spoon.

Avocado Tip

To speed ripening, place underripe avocados in a paper bag with a banana and leave on the counter for 1–2 days. The ethylene gas emitted by the banana helps the avocados ripen faster. Check daily to avoid over-ripening.

Storage instructions

Leftover guacamole keeps in the refrigerator for 2–3 days. It will darken on the surface as it oxidizes, but that browned layer can usually be scooped away and the guacamole beneath will still taste fresh. For best color and flavor, follow the method below to limit exposure to air.

Avoid freezing guacamole. Freezing changes the texture and often leaves it watery or grainy when thawed, so refrigeration is the preferred method for short-term storage.

How to Keep Guacamole from Browning

Guacamole darkens when exposed to air. Use one of these simple approaches to keep it green in the fridge:

  • Smooth the guacamole surface with the back of a spoon, then press a piece of plastic wrap directly against the surface so no air remains between the wrap and the guacamole. Seal the container with a lid.
  • An alternative is to pour a thin layer of water over the surface of the guacamole and close the lid. When ready to serve, pour off the water and stir the guacamole; the color underneath will be fresh and green.
  • If you prefer not to use plastic wrap, simply cover tightly and expect a little browning. Stir well before serving to mix in the fresher-looking layers beneath.

Ingredients

  • 3 ripe large avocados
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 teaspoon kosher salt, or to taste
  • 1/2 cup red onion, finely diced

Instructions

  1. Cut the avocados in half and remove the pits. Scoop the flesh into a medium bowl.
  2. Add the fresh lime juice, kosher salt, and the finely diced red onion. Using a fork or potato masher, mash until the guacamole reaches your preferred consistency. I like mine a bit chunky, but smooth is fine too.
  3. Taste and adjust salt or lime as needed. If you want heat, fold in a chopped jalapeño or a few dashes of hot sauce.
  4. Serve immediately, or press plastic wrap directly onto the surface and refrigerate until ready to serve. Stir before serving if any slight browning appears.

Notes

  • Use a fork or potato masher to adjust texture. Chunky guacamole has more texture; mashing more yields a creamier spread.
  • Taste with a tortilla chip before adding extra salt; chips are already salted and will skew your perception of seasoning.
  • To include cilantro, stir in about 2 tablespoons of chopped fresh cilantro at the end for a fresh herbal note.
  • For extra spice, add a small diced jalapeño (seeds removed for milder heat) or a few drops of your favorite hot sauce.
