I don’t have access to that exact product, so I adapted the idea to use a chicken sausage I can find locally. For the vegetables and fruit I kept things colorful and seasonal: diced sweet potatoes, fresh cranberries, sliced apple, and sweet onion wedges. The natural sweetness of the apples and sweet potatoes balances the tartness of the cranberries and the savory sausage. Because these ingredients carry so much flavor on their own, I prefer to keep the seasoning simple: a drizzle of olive oil, salt, pepper, and just a sprinkle of cinnamon to add warmth.

Ingredients

  • 3 medium sweet potatoes, peeled and diced into small pieces (about the size of a cranberry)
  • 6 ounces fresh cranberries (about 1 1/2 cups)
  • 1 large apple, cored and sliced
  • 1 medium sweet onion, cut into wedges
  • 1 pack apple- or cranberry-flavored chicken sausage, sliced into rounds
  • 1 tablespoon olive oil
  • Salt, black pepper, and cinnamon to taste (use cinnamon sparingly)

Instructions

  1. Preheat the oven to 425ºF (220ºC).
  2. On a large sheet pan combine the diced sweet potatoes, fresh cranberries, sliced apple, onion wedges, and sausage rounds.
  3. Drizzle the ingredients with olive oil, then season with salt, pepper, and a light sprinkling of cinnamon. Toss everything together so the oil and spices coat the fruit, vegetables, and sausage evenly.
  4. Spread the mixture into a single layer on the sheet pan and roast for 25–30 minutes, stirring once halfway through, until the sweet potatoes are tender and the sausage is heated through.
  5. Remove from the oven and serve immediately. This dish is great on its own or served over rice, quinoa, or a bed of greens.

Notes

*Cut the sweet potato pieces to approximately the size of cranberries so everything cooks evenly. If you prefer softer apples, slice them thinner; if you want more texture, leave slightly thicker pieces.
