
This bright, healthy salad is simple to make and works year-round since the ingredients are available and tasty any season.


The idea for this salad came from a bistro-style vinaigrette I recently shared on the blog. I wanted a filling salad that would showcase that dressing, so I combined a few favorite flavors for a satisfying lunch or light dinner.

Feel free to adapt this however you like. My version includes sliced apples, fresh blueberries, cherry tomatoes, crumbled goat cheese, mixed baby greens and chopped chives. I toss everything with a classic bistro vinaigrette made with champagne vinegar for a delicate, slightly tangy finish. Keep the dressing light so the fruit and cheese shine.
If you like a bit of crunch and sweet-salty contrast, caramelized nuts are an excellent addition. Caramelized almonds or pecans add texture and flavor—make a little extra because they’re irresistible as a snack while you cook.


This salad comes together quickly and works as a main for lighter meals or as a side alongside grilled proteins, sandwiches or soups. The mix of sweet fruit, tangy vinaigrette and creamy goat cheese keeps each bite interesting.

Description
A simple dinner or side salad that pairs with many meals. Fresh blueberries and apple slices meet cherry tomatoes, crumbled goat cheese and mixed greens, all tossed with a delicate French-style vinaigrette.
Ingredients
- 6 ounces mixed baby greens (use your favorites)
- 1 crisp apple, cored and thinly sliced
- Juice of 1/2 lemon
- 2 ounces fresh blueberries
- 4 ounces cherry tomatoes, halved or sliced
- 3 ounces goat cheese, crumbled
- Bistro vinaigrette, prepared with champagne vinegar
- Fresh chives, chopped into 1-inch pieces
Instructions
- Rinse and thoroughly dry the greens.
- Toss the apple slices with lemon juice to prevent browning. Add the apples to the greens along with blueberries, cherry tomatoes and goat cheese. Drizzle with just enough vinaigrette to lightly coat the salad—avoid overdressing. Transfer to a serving bowl or platter, sprinkle with chopped chives and serve. Offer any extra dressing on the side.
