Bacon Bleu Cheese and Pistachio Truffles
These bite-sized cheese truffles are an ideal party appetizer—creamy, savory, and easy to serve with crackers or enjoy on their own.

Ingredients
- 1 (8 oz.) pkg. cream cheese softened
- 1 (4 oz.) pkg. bleu cheese crumbled
- 8 strips bacon cooked crisp and finely chopped
- 1/2 c. pistachios chopped
- 1/2 c. chopped bacon for garnish, optional
- 1/2 c. chopped pistachios for garnish, optional

In a medium bowl, use a hand mixer to blend the softened cream cheese with the crumbled bleu cheese. Stir in the finely chopped, crisp-cooked bacon and the chopped pistachios until the mixture is evenly combined.

Using about 1 tablespoon of the mixture, form balls roughly 1½ inches in diameter. Roll each ball in the chopped pistachios or chopped bacon to coat, or use a mixture of both for variety. Place the truffles on a tray, cover, and refrigerate for at least 1 hour to firm up before serving.
Notes
Cook’s Note: These truffles are naturally low in carbs—skip the crackers for a keto-friendly appetizer. Serve chilled with assorted crackers or on a platter with fresh herbs for garnish.
Variations: Substitute pecans or chopped walnuts for the pistachios, or swap bleu cheese for goat cheese if you prefer a milder flavor.
