Whenever I order a salad out, Caesar dressing is my go-to — there’s something about the tangy lemon, savory anchovy, and nutty Parmigiano Reggiano that makes every bite sing. I used to buy bottled Caesar, until I read the ingredient list and realized how many processed additives there were. Making it at home is faster than you think: no special equipment needed, only a bowl, a whisk, and a spoon. This recipe yields enough for two large main-course salads or four side salads.
🧾 Ingredients
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 1½ teaspoons Worcestershire sauce
- ¾ cup mayonnaise
- 2 cloves garlic, minced
- 1 teaspoon anchovy paste (or 2 anchovy fillets, mashed)
- ½ cup Parmigiano Reggiano, finely grated
- Freshly ground black pepper, to taste
A few quick notes on the ingredients
- Anchovies: Use anchovy paste for convenience, or mash two anchovy fillets to make a paste. Anchovies add an umami depth that’s essential to classic Caesar flavor; you can reduce the amount if you’re unsure, but the dressing won’t taste the same without them.
- Cheese: Freshly grated Parmigiano Reggiano makes a big difference. Pre-grated blends are fine in a pinch, but the flavor and texture will be superior with real Parmigiano.
- Garlic: Fresh minced garlic provides brightness. If you prefer a milder garlic flavor, let the minced garlic sit in the lemon juice for a few minutes before combining with the other ingredients.

1. In a bowl, whisk together the lemon juice, olive oil, Dijon mustard, and Worcestershire sauce until fully combined.

2. Add the mayonnaise and whisk until the mixture is smooth and creamy.
3. If using anchovy fillets, mash them thoroughly with a fork until they form a paste. If using anchovy paste, you can add it directly. The goal is for the anchovy flavor to disperse evenly through the dressing.

4. Stir in the garlic, anchovy paste or mashed fillets, and the finely grated Parmigiano Reggiano. Mix thoroughly with a spoon so the cheese and anchovy are evenly distributed.
5. Season with freshly ground black pepper to taste. You likely won’t need additional salt because the cheese and anchovies add natural saltiness.

🫙 Storage
Transfer the dressing to an airtight container and refrigerate. Properly stored, it will keep for about five days. The flavor often improves a bit after an hour or two as the ingredients meld, but it’s best consumed within a few days for the freshest taste.

Traditional Caesar is built on Romaine lettuce, but feel free to experiment. I sometimes use mixed greens for a lighter base.
