Air Fryer Sweet Potatoes are one of the best ways to prepare sweet potatoes. In this recipe I made Hasselback sweet potatoes finished with garlic butter and fresh parsley.
I cooked these in an Instant Pot Duo Crisp using the air fryer lid, but you can easily make them in any air fryer oven or an air fryer basket.

Hasselback herbed sweet potatoes work well as a side or even a simple main. I served them as a side topped with a dollop of sour cream and a sprinkle of parsley.

Hasselback sweet potatoes are thinly sliced across the top so the potato fans slightly while staying intact. The slits allow butter and seasonings to penetrate for crisp, caramelized edges and tender centers.
After slicing, you rub the potato with butter and seasonings, then air fry. Halfway through cooking brush with garlic butter and finish until tender and golden.

Slice the potato into thin cuts about 1/8″–1/4″ apart, stopping before you reach the bottom so the potato remains whole. I usually eye-ball the spacing, which works fine, but you can measure if you prefer more uniform slices.

I like to serve mine with sour cream and parsley, but plain, yogurt, or other toppings work well. This version leans savory, though you can switch to cinnamon and sugar for a sweet option.

Cooking time varies with potato size. Use the times below as a guideline, but the potatoes are done when a fork slides in easily. Smaller or thinner potatoes will finish sooner, larger ones will need more time.

Yes. Preheat the oven to 400–425°F and bake the Hasselback sweet potatoes until fork-tender, following the same slicing, buttering, and basting steps.

Hasselback Air Fryer Sweet Potatoes
Ingredients
- 2 sweet potatoes you can use more
- 1 stick unsalted butter
- salt and pepper to season
- 1/2 teaspoon parsley
- 1/2 teaspoon garlic powder
Instructions
- Wash and prep the sweet potatoes. Slice thinly about 1/4″ apart, stopping before you cut through so the potato stays intact.
- Rub the outside and between the slices with the cold stick of butter, then season with salt and pepper.
- Place the Hasselback potatoes in the air fryer. Lining the shelf with foil can catch drips and help prevent smoking.
- Set the air fryer to 350°F and cook for 20 minutes.
- Melt some butter in a microwave-safe dish, stir in garlic powder and parsley, and brush the mixture over the potatoes. You won’t need all the butter.
- Cook another 20 minutes, then check for fork-tenderness. If not tender, return to the air fryer until done.
