Crispy French fries piled with the flavors of a Cuban sandwich and finished with a silky Swiss cheese sauce — the perfect appetizer or snack that’s sure to please a crowd.

Cuban Fries are a fun, speedy twist on the classic Cuban sandwich. If you love the Cuban Sliders on this site, you’ll appreciate how easily those same flavors translate to a loaded fry. These come together quickly: crispy fries topped with diced ham, dill pickles, a generous drizzle of creamy Swiss cheese sauce, and a touch of mustard for brightness.

This version skips slow-roasted pork to keep it fast — the ham provides the savory element and pairs perfectly with pickles and mustard. It’s a great option when you want big, familiar flavor without spending hours in the kitchen. The result is playful, satisfying, and easy to adapt.

The key component is the Swiss cheese sauce. It’s made with a simple roux: melt butter, whisk in flour, add milk and cook until it thickens, then stir in chopped Swiss until smooth. You can season with a pinch of white or black pepper if desired. This basic technique works with many cheeses and is the same foundation used for mac and cheese or cheesy pasta sauces.
For the toppings I used deli ham diced into small pieces and dill pickle chips cut into bits. Yellow mustard adds the finishing tang — it may seem small but it ties the dish together, so I recommend including it.

Cuban Fries

Ingredients
- 30 ounce frozen french fries
- 1 cup diced ham
- ¼ cup dill pickles diced

Bake the french fries according to package directions until golden and crisp.

While the fries bake, make the Swiss cheese sauce: melt butter in a medium saucepan over medium heat. Whisk in the flour to form a roux and cook briefly. Slowly pour in the milk, whisking until smooth; the mixture will thicken as it heats.
-
Stir in the chopped Swiss cheese and continue stirring until the cheese is fully melted and the sauce is thick. Remove from heat.
