Ingredients

  • 12–15 puris (ready-made puris are convenient)
  • 1 cup curd (yogurt), beaten until smooth
  • 1 tsp sugar
  • ½ tsp black salt (kala namak)
  • ¼ tsp red chilli powder (adjust to taste)
  • ½ cup boiled and chopped potatoes
  • ½ cup chopped onions
  • Some chaat masala (to sprinkle)
  • Sweet tamarind or date chutney (imli or date chutney)
  • Green chutney (mint-coriander)
  • Some thin sev for topping

Instructions

  1. Gather and prepare all ingredients. Wash and chop the onions, boil and roughly mash or chop the potatoes, and have both chutneys ready. Preparing everything ahead will make assembly fast and keep the puris crisp until serving.
  2. If using store-bought puris, check that they are crisp and unbroken. Homemade puris can be made, but ready-made puris save time and effort.
  3. Beat the curd until smooth. Add the sugar and black salt, mix well and taste. The yogurt should be mildly sweet with a hint of tang. Adjust sugar and salt to your preference.
  4. Mix the potato and onion together in a bowl. You can season this mixture lightly with a pinch of salt and a little chaat masala if desired. For a healthier option, add boiled sprouted moong or sprouted black gram to the filling.
  5. To assemble: gently make a small hole or crack on the top of each puri so you can fill it without breaking it completely.
  6. Add a small spoonful of the potato-onion mixture into each puri, taking care not to overfill so the puri doesn’t break.
  7. Spoon in about a tablespoon of the beaten curd over the filling.
  8. Add both chutneys: a little sweet tamarind/date chutney for sweetness, and green chutney for a fresh, herbaceous kick. Adjust quantities to suit your taste—some prefer more green chutney and less sweet chutney, others the opposite.
  9. Sprinkle a pinch of chaat masala and a dusting of red chilli powder if you like heat. Finish with a generous sprinkle of thin sev to add crunch.
  10. Serve immediately. Dahi puris are best eaten right after assembling so the puris remain crisp and the flavours are bright and contrasting.

Notes

Assemble and serve dahi puri immediately. Once filled, the puris will absorb moisture and become soggy, so they are not suitable for storing once assembled.

Adjust chutneys and spices to your preference. If you prefer less sweetness, reduce or omit the sweet chutney. Likewise, increase green chutney for more heat and tang.

For variation, add boiled sprouts, roasted chana, or finely chopped coriander to the filling for additional texture and nutrition.
