I discovered mole fairly recently at a Mexican restaurant in San Francisco and was instantly smitten. Its complex, slightly smoky and slightly sweet profile works beautifully with meat, rice, and many other dishes. Over the years I refined a paleo-friendly mole and this Instant Pot version brings all of that flavor with much less effort.

Pulled pork mole is shredded pork bathed in a bold, layered mole sauce. This paleo mole combines warm spices—chipotle and ancho or regular chili powder, cinnamon, and cumin—with unsweetened cocoa, tomato paste, almond butter, and a bit of sweetness from raisins. The result is moist, richly flavored meat that isn’t overly spicy.

Using an Instant Pot speeds up the cooking process, making it an excellent option for a hearty weeknight dinner or meal prep when you want tender shoulder without hours of slow cooking.

What Type of Pork Do I Need to Use?

Instant Pot Pulled Pork Mole (Paleo, Whole30)

Prepare a flavorful paleo-friendly dish with ease when following this Instant Pot Pulled Pork Mole recipe. The meal consists of pork shoulder covered in a tasty sauce made with chili powder and other fresh ingredients.

Ingredients 

  • 4 lb boneless pork shoulder, cut into 4 pieces
  • 1 tbsp cumin
  • 1 tbsp sea salt
  • 1 tsp ground black pepper
  • 1 tbsp coconut oil

Mole Sauce

  • 1 tbsp coconut oil
  • 1 small red onion, diced
  • 4 garlic cloves, minced
  • 2 cups bone broth, or chicken broth
  • 1/4 cup tomato paste
  • 1/4 cup almond butter
  • 1 tbsp chipotle powder
  • 1 tbsp ancho chili powder, or regular chili powder
  • 1 tsp cinnamon
  • 1/4 tsp dried oregano
  • 2 tbsp raisins
  • 5 tbsp unsweetened cocoa powder

Instructions 

  • Set the Instant Pot to SAUTÉ and add coconut oil to the liner. Season the pork with cumin, sea salt, and black pepper.
  • Sear the pork for about 2 minutes per side. Turn off the Instant Pot and leave the seared pork in the liner.
  • To make the mole sauce, heat coconut oil in a saucepan over medium-high heat. Add the diced onion and minced garlic and sauté 3–4 minutes until fragrant.
  • Stir in bone or chicken broth, tomato paste, almond butter, chipotle and chili powders, cinnamon, oregano, and raisins until combined.
  • Bring the mixture to a boil, reduce to a simmer, cover, and cook 5 minutes. Stir in the cocoa powder until incorporated.
  • Blend the sauce with an immersion blender or transfer to a regular blender and puree until smooth.
  • Pour the mole sauce over the pork in the Instant Pot. Seal and cook on MANUAL for 60 minutes, then quick-release the pressure.
  • Remove the pork and shred with two forks (or a mixer). Return the shredded pork to the pot and stir to coat with sauce.
  • Optional: Spread the shredded pork on a baking sheet and broil 4–5 minutes for crispy edges.
  • Serve on its own, in tacos, burrito bowls, nachos, sandwiches, or with sides.
