Lentil Cowboy Caviar Recipe: Zesty Salsa with Corn & Tomatoes

Cowboy caviar is basically its own food group in my kitchen. Known in some regions as Texas caviar, this bright, veggie-forward mix is endlessly versatile and wildly popular at gatherings — and for good reason. It’s fresh, colorful, and easy to make ahead.

I gave this classic a lentil twist and the result is one of my favorite variations yet. Small canned lentils make the mix easier to scoop than larger beans, so every chip or salad forkful holds more of everything: tomatoes, peppers, corn, cilantro, black beans, and tender lentils. The texture and flavor are fantastic together.

INGREDIENTS NEEDED

This lentil cowboy caviar is a mix of fresh produce and pantry-friendly canned goods. The basic components include:

  • Black beans
  • Lentils
  • Roma tomatoes
  • Red onion
  • Bell pepper
  • Jalapeño
  • Corn
  • Cilantro

The dressing is simple: fresh lime juice, avocado oil (or extra virgin olive oil), white or red wine vinegar, ground cumin, and sea salt. That straightforward dressing brightens the vegetables and beans and ties everything together for a balanced, fresh-tasting salad/salsa.

Lentil Cowboy Caviar

This lively bean salsa can be served immediately, but it develops more depth if you chill it for a few hours or overnight. That makes it a perfect meal-prep option: make once, enjoy multiple meals. Leftovers are excellent on salads, in burrito bowls, on tacos, inside quesadillas, or simply served with tortilla chips.

If you don’t need the full batch, halve the recipe — it scales down easily.

Ingredients

  • 2 cups diced roma tomatoes (about 4–5 roma tomatoes)
  • 1 cup finely diced red onion (about ½ large onion)
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, diced (seeds optional)
  • 1 cup sweet corn (thawed if frozen or drained if canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) lentils, drained and rinsed
  • ½ cup chopped fresh cilantro
  • 2 limes (for juice)
  • 2 TBSP avocado oil or extra virgin olive oil
  • 1 TBSP white or red wine vinegar
  • ½ tsp ground cumin
  • ½ tsp fine sea salt

Serve with

  • Tortilla chips for dipping
  • Additional cilantro and lime wedges to garnish (optional)

Instructions

Prep the vegetables

  • Finely dice the red onion and place it in a small bowl. For a quick pickled flavor, drizzle a little oil and vinegar over the onion and let it sit while you prepare the other ingredients.
  • Dice the roma tomatoes and bell pepper.
  • If you prefer a milder salsa, remove the seeds and membranes from the jalapeño before dicing. Leave them in for more heat.
  • Drain and rinse the black beans and lentils. Drain the corn if using canned or thaw if frozen. Fresh corn is also delicious here.
  • In a large bowl, combine the prepared beans and lentils with the vegetables and chopped cilantro.
  • Squeeze the limes and whisk the juice with the oil, vinegar, cumin, and salt. Pour the dressing over the vegetable mixture and toss to combine.
  • Taste and adjust seasoning: more lime, salt, or cilantro if desired. The flavors should be bright and balanced.
  • For best results, cover and chill for at least 30 minutes or overnight. Serve chilled or at room temperature with tortilla chips, or spoon over salads, tacos, or bowls.

Notes

If you prefer to cook dried beans and lentils from scratch, use about 1½–2 cups each of cooked black beans and cooked lentils in place of the canned versions.

Q: Can I add avocado?

Yes — avocado is a delicious addition. Choose one that’s ripe but still firm enough to cube. Toss the cubes with a little lime juice (and a dash of olive oil, if you like) to slow browning, and add just before serving so the avocado retains some texture. If your avocados are overly soft, mash them into a quick guacamole and serve on the side.
