Ingredients

For the Orange Cheesecake

  • 1 pound (2 blocks) cream cheese, very soft
  • 5 oz (1/2 cup) frozen orange juice concentrate, thawed and at room temperature
  • 4.5 oz (1/2 cup plus 2 Tablespoons) granulated sugar
  • Zest of 2 oranges
  • 1 Tablespoon orange liqueur (optional)
  • 3–4 drops orange oil or 1/4 teaspoon orange extract
  • 3/8 teaspoon kosher salt
  • 8 oz (1 cup) heavy cream, cold
  • 1/2 teaspoon vanilla extract

For the Gingersnap Crumble

  • 6 oz (about 20–22) hard gingersnap cookies (not soft molasses cookies)
  • 2 Tablespoons softened butter

To Assemble

  • Orange cream (prepared above)
  • Gingersnap crumble
  • About 1 1/2 cups cranberry sauce (smooth or lightly blended)

  • Lightly sweetened whipped cream
  • Quartered orange slices
  • Sugared cranberries

Instructions

To Make the Orange Cream

  • In a stand mixer bowl, beat the softened cream cheese until smooth, about 2 minutes, scraping the bowl as needed.
  • Add the orange juice concentrate, sugar, orange zest, orange liqueur (if using), orange oil or extract, and salt. Beat until completely smooth, scraping the paddle and bowl as necessary. Set aside.
  • In a separate bowl, whip the cold heavy cream with vanilla to medium peaks. Fold one third of the whipped cream into the orange mixture to lighten it, then gently fold in the remaining cream until the mixture is uniform and streak-free.

For the Gingersnap Crumble

  • Pulse the gingersnap cookies in a food processor until mostly fine crumbs remain with a few slightly larger pieces. Add the softened butter and pulse until the crumbs begin to clump.
  • Spread the crumb mixture on a parchment-lined baking sheet and bake at 350°F (175°C) for about 10 minutes. Remove to cool completely, then break into crumbs.

To Assemble

  • Start with a layer of gingersnap crumble in the bottom of your chosen glass or bowl to provide crunch and stability.
  • Carefully spoon or pipe a layer of orange cream over the crumbs, pressing gently so the crumbs stay in place rather than being dragged into the cream.
  • Add a thin layer of cranberry sauce. Repeat a second set of crumble, orange cream and cranberry as desired.
  • Chill the assembled parfaits for at least 4 hours to set. Before serving, garnish with whipped cream, sugared cranberries, a small slice of orange, and a rosemary tip if desired.

Notes

If your cranberry sauce is very chunky, warm it slightly and blend or press it through a sieve until relatively smooth. Smooth sauce makes cleaner, prettier layers.
