Perfectly Grilled Flank Steak: Juicy Marinade & Sear Guide

I don’t usually man the grill at home—Rod handles most of the barbecuing, smoking and sausage-making. But sometimes I step in, and this marinated grilled flank steak was one of those times. I made it myself start to finish and was really pleased with the result.

It’s an approachable recipe: the marinade is bright and savory, and the grilling is straightforward. If I can make it turn out well, you can too.

How do I make the marinade?

The marinade is quick and fresh: lime juice, soy sauce, minced garlic and freshly grated ginger. Whisk them together or combine them in a zip-top bag, then add the steak to marinate.

How do I grill flank steak?

  • Preheat your grill on high for at least 5 minutes so the grates are very hot.
  • Place the marinated flank steak on the hot grill.
  • Lower the heat to medium-high and close the lid.
  • Grill the steak for about 5 minutes on the first side.
  • Flip the steak and grill for another 5 minutes for medium‑rare to medium, depending on thickness and grill temperature.
  • Remove the steak from the grill and loosely tent with foil. Let it rest for 8–10 minutes.
  • Slice thinly across the grain into strips and serve.

I made this flank steak two weekends in a row because it was that good—and it wasn’t a one-time fluke. The results were consistently tender and flavorful.

This steak pairs well with simple sides like roasted zucchini, beans, a Caesar salad, or a bright horseradish sauce. Leftovers are excellent in steak quesadillas or sandwiches.

  • pounds flank steak

Marinade

  • ¼ cup soy sauce
  • 2 garlic cloves, minced
  • 1 teaspoon fresh grated ginger
  • 1 lime, juiced

Instructions

 

  • Combine the soy sauce, minced garlic, grated ginger and lime juice in a large bowl or a zip-top bag.
  • Add the flank steak, coating it thoroughly. Marinate in the refrigerator for 30 minutes up to 2 hours.
  • Preheat the grill on high for at least 5 minutes. Place the steak on the hot grill, reduce heat to medium-high, close the lid and cook for 5 minutes.
  • Flip and grill for another 5 minutes (adjust time for desired doneness). Remove from heat, tent with foil for 8–10 minutes, then slice thinly across the grain and serve.
