Customize Your Soup
This recipe is versatile. For heat, add diced jalapeños or a pinch of red pepper flakes. If you prefer a classic chicken-and-noodle soup, stir in your favorite noodles after cooking.
To add noodles: after shredding the chicken, switch the Instant Pot to Sauté and boil the noodles for 6–8 minutes or until tender.
You can also make homemade chicken stock in the Instant Pot. Add chicken bones, vegetables, salt, pepper and a bay leaf, cover with water and cook on high pressure for 90 minutes. Strain and refrigerate or freeze the broth for later use.

Chicken Soup Recipe
A healthy, flavorful alternative to traditional chicken noodle soup. Tender chicken and vegetables simmered in a warm broth that tastes like it’s slow-cooked all day, yet is ready in under 30 minutes.
Ingredients
- 3 1/2 cups sliced carrots
- 4 cups diced celery
- 1 yellow onion, chopped
- 2 chicken breasts
- 2 teaspoons salt
- 1 teaspoon Italian seasoning
- 2 quarts low-sodium chicken broth
Instructions
- Place the chicken breasts in the bottom of the Instant Pot.
- Add the sliced carrots, diced celery, chopped onion, salt, Italian seasoning and chicken broth.
- Close and lock the lid. Set to Manual (High pressure) for 12 minutes.
- When the cook time ends, perform a quick release of the pressure.
- Carefully transfer the chicken to a cutting board and shred with forks. Return the shredded chicken to the pot.
- Adjust seasoning with additional salt and pepper to taste. If adding noodles, switch to Sauté and cook noodles for 6–8 minutes until tender.
Notes
