Candy corn is one of those treats that instantly evokes autumn. The bright bands of white, yellow and orange signal that Halloween and the cooler days of October are near. Personally, I never craved the original candy — knowing it’s mostly sugar, corn syrup, wax and artificial dyes made it feel more like a decoration than a treat. Still, when I recently baked a turmeric cake and admired its vivid color, I had a sudden urge to turn that palette into something creamy and celebratory: a candy corn–inspired cheesecake. I tend to “cheesecake” everything, so why not reimagine candy corn as a wholesome frozen cheesecake?

It took several attempts to get a naturally orange layer that looked bright enough without using artificial color. The solution in this version is a combination of carrots, soft dried apricots and a touch of turmeric. All whole-food ingredients, all natural color, and most importantly — delicious. The result is a visually striking dessert that keeps to clean ingredient choices while capturing the candy corn look.

The texture sits somewhere between a crustless cheesecake and a dense frozen dessert. Serve it chilled like a classic cake, cut into wedges to show the seasonal tri-color stripes — this presentation is ideal for potlucks, office parties, or a children’s classroom celebration. If you want to mimic individual candy corn kernels, freeze the cake in a slab, cut it into long strips, then slice those strips into triangles for the classic kernel shape. Either way, it’s playful and perfectly on-theme for fall gatherings.

This is a healthier Halloween idea that still captures the fun of the season. It’s naturally colored, free from common allergens, and sweetened without refined sugar — making it an excellent option when you want something festive but cleaner. The flavors are bright and balanced: the lemon in the base adds a refreshing tang, the mango and turmeric layer brings warm color and subtle spice, and the apricot-carrot layer provides a natural sweetness and rich orange tone.

Raw Candy Corn Cheesecake

Fall-themed, dairy-free, raw cheesecake styled to resemble candy corn. It uses natural ingredients for vibrant seasonal colors and avoids artificial additives.

Ingredients

*Make sure ALL ingredients are at room temperature before blending.

White layer:

  • 1½ cups raw cashews, pre-soaked and strained (overnight, or 15 minutes in boiled water)
  • 6 tbsp lemon juice
  • 6 tbsp maple syrup (or agave, coconut nectar, brown rice syrup)
  • 5 tbsp coconut oil, soft or liquid
  • 1 tsp pure vanilla extract
  • ¼ tsp salt

Yellow layer add-ins:

  • 1 cup chopped mango
  • 1½ tsp turmeric
  • ½ tsp cinnamon

Orange layer add-ins:

  • 1 cup soft dried apricots
  • 1½ large carrots, chopped
  • 2 tbsp coconut oil, soft or melted
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup (or sweetener of choice)
  • 1 tsp cinnamon
  • A pinch more turmeric, if needed to adjust color

Instructions

  1. Place all white layer ingredients into a high-speed blender and process until completely smooth. Remove approximately 1¼ cups of this mixture and set it aside for the top layer.
  2. Add the yellow layer ingredients (mango, turmeric, cinnamon) to the remaining white mixture in the blender. Blend until fully combined and smooth. Remove approximately 1¼ cups of this yellow mixture and set aside.
  3. Add the orange layer ingredients (dried apricots, chopped carrot, coconut oil, lemon juice, maple syrup, cinnamon and a pinch of turmeric if desired) to the yellow mixture still in the blender. Blend until smooth and evenly colored.
  4. Transfer the orange mixture into a 6″ springform pan and spread it evenly with a spatula to form the base. Tap the pan gently on the counter to smooth the surface. Carefully add the yellow layer by spooning small amounts over the orange base and distributing them across the surface so the layers do not sink into each other. Smooth the yellow layer gently, then repeat the process with the reserved white mixture to form the top layer.
  5. Freeze the assembled cake for at least 5–6 hours or ideally overnight so the layers set firm. When ready to serve, remove from the freezer, unmold, and slice into wedges. For candy-corn-shaped pieces, cut into slabs and then into triangles to create individual kernels.

Notes

If you need a larger cake, simply double the recipe proportions and use a larger pan. All ingredients should be at room temperature to blend smoothly and create evenly textured layers.
