Many of you may be familiar with tequila in cocktails like Margaritas or the classic Tequila Sunrise. While it shines in those drinks, using tequila as a marinade ingredient brings an entirely different depth of flavor—citrusy, slightly smoky, and well balanced by herbs and spices.

To accompany the steak I put together a Tex-Mex style spread: charred sweet peppers, a lime “massaged” slaw that adds freshness and crunch, grilled corn topped with coriander butter, and a creamy guacamole.
