- 1 large avocado — ripe, peeled, pitted, and mashed well
- 1/4 cup granulated sugar
- 2/3 cup brown sugar, plus 2 tablespoons
- 1 egg
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
- 2 ounces dark chocolate chips
- 2 ounces white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with a silicone mat or grease it lightly and set aside.
- In a small bowl, whisk together the cocoa powder, flour, baking powder, and salt until evenly combined. Set aside.
- In a large bowl, stir the mashed avocado with both sugars, the egg, and the vanilla until smooth and well combined. The mixture will be somewhat glossy and cohesive.
- Add the dry ingredients to the avocado mixture and stir until just combined. The dough will be wetter than typical cookie dough but should hold together enough to scoop. Gently fold in the dark and white chocolate chips.
- Drop rounded tablespoonfuls (about 1 to 1 1/2 tablespoons) of dough onto the prepared baking sheet, spacing them about 2 inches apart. Because the dough is moist, you won’t form firm balls; use a spoon or cookie scoop and let the dough settle on the sheet.
- Bake for approximately 10 minutes, until the centers are set but still soft. The cookies will appear slightly underbaked—that’s intentional to keep the tender texture.
- Allow the cookies to cool on the baking sheet for at least 10 minutes before transferring them to a wire rack. This resting time helps them finish setting and maintains their soft, pillow-like texture.
