Pistachio salad was a holiday staple growing up. Its cheerful green hue always brightened our table at Christmas, Easter, and St. Patrick’s Day, and my mom appreciated how quick it was to prepare.

Over the years it’s remained a family favorite and now appears on our holiday menus as well. The color makes it especially fun for themed gatherings, and it’s a sweet, nostalgic addition to any dessert spread.

The salad is versatile. For Easter we like using pastel multi-colored mini marshmallows to add a bit of color and extra sweetness kids enjoy. For other holidays we stick with white mini marshmallows or top individual servings with whipped cream, chopped pistachios, and a maraschino cherry for a classic finish.

It’s so simple my five-year-old made it for our family dessert night recently. Preparation takes just a few minutes and chilling only needs about 20–30 minutes to set, though I prefer making it a few hours ahead or the day before to let the texture fully firm up. Save any toppings for just before serving so they stay fresh.

Method
