Smoky Chipotle Bacon Cheddar Dip Recipe

Super Bowl week calls for great snacks, and this bacon chipotle cheddar dip is a perfect addition to any game-day spread. Alongside classics like chicken wings, nachos, pizza, and chili, a flavorful dip gives guests something to graze on between plays. This version balances creamy cheese, smoky bacon, and a smoky-spicy kick from chipotle peppers in adobo.

The dip is built on a smooth base of cream cheese and sour cream, folded with plenty of grated cheddar for richness. Canned chipotle peppers in adobo add a deep, smoky heat—adjust the number of peppers and the adobo sauce to suit your taste. I used two peppers and two tablespoons of adobo sauce, which yielded noticeable heat but remained approachable for most palates.

Because everything is better with bacon, cooked and crumbled bacon is stirred into the finished dip for savory depth and texture. Thinly sliced green onions add a bright, fresh bite that complements the smokiness and creaminess.

Warm or Cold!

This dip is versatile—serve it chilled or warmed, depending on your preference and the occasion.

  • To serve cold: combine the ingredients, transfer to a sealed container, and refrigerate until ready. Spoon the chilled dip into a serving bowl just before guests arrive.
  • To serve warm: place the prepared dip in an oven-safe dish and warm in a 325°F oven until heated through. Stir occasionally while it heats so the cheese melts evenly and the texture stays creamy.

Both warm and cold versions pair well with crackers, toasted baguette slices, tortilla chips, pita crisps, or vegetable dippers. Be ready—this dip disappears fast.

Ingredients

  • 1 package (8 oz / 227 g) cream cheese
  • 1 1/2 cups sour cream
  • 2 cups grated cheddar cheese
  • 2 chipotle peppers in adobo (adjust to taste)
  • 2 tbsp adobo sauce
  • 8 green onions, thinly sliced
  • 10 slices bacon, cooked and crumbled

Instructions

Notes

Adjust the heat by adding more or fewer chipotle peppers or adobo sauce. For a milder flavor, use one pepper and a teaspoon of adobo sauce; for more heat, add an extra pepper or an additional tablespoon of sauce.
