Ingredients

Topping

  • 1 medium cauliflower
  • 3 tablespoons sour cream
  • 1 cup grated Cheddar cheese
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh chives, chopped

Filling

  • 7 oz white fish
  • 4 oz salmon
  • 10 medium prawns

Sauce

  • ½ cup cream cheese
  • ½ cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped chives

Instructions

MAKE THE CAULIFLOWER TOPPING

  1. Cut the cauliflower into florets and place in a saucepan.
  2. Cover with water and bring to the boil.
  3. Cover and simmer for 20 minutes until soft.
  4. Drain, add the butter and mash until the butter melts.
  5. Stir in the grated cheese and sour cream. Season with salt and pepper.
  6. Blend the mash until smooth, or leave slightly textured if preferred.
  7. Fold in the chopped chives and set aside.

COOK THE FISH

  1. Poach or steam the white fish, salmon and prawns for about 8 minutes until cooked through and easy to flake.
  2. Set the cooked seafood aside while you make the sauce.

MAKE THE SAUCE

  1. Gently heat the cream cheese, heavy cream, lemon juice and Dijon mustard in a saucepan, stirring until smooth.
  2. Stir in the chopped parsley and chives.

ASSEMBLE

  1. Preheat the oven to 200°C / 400°F.
  2. Flake the white fish and salmon into large chunks.
  3. Mix the fish and prawns into the cheese sauce.
  4. Spoon the fish and sauce into a baking dish.
  5. Pipe or spoon the cauliflower mash evenly over the top.
  6. Bake for about 20 minutes until the top is golden and the filling is hot.
  7. Serve immediately and enjoy.
