Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 ripe bananas, mashed (about 1 1/4 cups)
  • 2 large eggs
  • 1 tsp vanilla
  • 2 tbsp sour cream
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Crumb Mixture

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 cup flour
  • 3/4 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 9×13-inch pan with nonstick spray and set aside.
  2. In a bowl, beat the softened butter and sugar until combined. Add mashed bananas, eggs, vanilla and sour cream; mix until blended.
  3. Add flour, baking powder and salt. Stir until just combined—do not overmix. Pour the batter into the prepared pan.
  4. In a small bowl, combine the crumb mixture ingredients. Use a fork to work the mixture into small crumbs; avoid overworking. Sprinkle the crumbs in an even, thick layer over the batter.
  5. Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Serve warm or cooled. Store covered at room temperature for up to 3 days.
