Slimer-Inspired Green Cheesecake Parfaits for Halloween Treats

I’ve always been a fan of the original Ghostbusters™ movies — their goofy charm was a big part of my childhood, and the cast still cracks me up. The latest Ghostbusters™ brings a fresh premise and a lot of girl power to the screen, which I absolutely love. As the parent of a spirited little girl, I’m excited by the idea of showing her four funny, capable women on the job.

Slimer was a favorite of mine back in the day, and he shows up in the new film alongside his ghostly counterpart. The whole movie is full of moments that made me laugh out loud — especially Kate McKinnon, who totally steals the show.

For a few years I’ve been collaborating with Campfire® Marshmallows to create fun, gooey recipes, and their seasonal Ghostbusters™ marshmallows are especially delightful. Slimer and Stay Puft Man in marshmallow form are charming and tasty — perfect for roasting, snacking, or turning into themed desserts like these Slimer Cheesecake Parfaits.

Slimer Cheesecake Parfaits

Ingredients

  • 30 vanilla wafers crushed into crumbs
  • 3 tablespoons unsalted butter melted
  • 15 Campfire® Stay Puft Man Ghostbusters™ Marshmallows
  • 8 ounces cream cheese room temperature
  • ½ cup powdered sugar sifted
  • ½ teaspoon vanilla extract
  • 8 ounce container of frozen whipped topping Cool Whip or TruWhip, thawed (divided use)
  • 1 3.4 ounce package pistachio pudding mix
  • 1 ½ cups milk
  • 6 Campfire® Slimer Ghostbusters™ Marshmallows

Instructions

  • Combine the vanilla wafer crumbs and melted butter in a medium bowl.
  • Divide the crumbs evenly among six serving dishes or plastic cups and press into the bottoms to form a crust. Chill while you prepare the filling.
  • Place 15 Campfire® Stay Puft Man marshmallows in a large, deep microwave-safe bowl. Microwave on high for 45–60 seconds until they puff and begin to melt. Use a buttered spatula to stir until smooth, then set aside.
  • In a large bowl with an electric mixer, beat the cream cheese about 2 minutes. Add the powdered sugar and vanilla and beat 1 more minute. Fold the melted marshmallows into the cream cheese mixture and beat another minute.
  • Gently fold in half of the thawed whipped topping using a rubber spatula.
  • Spoon or pipe the cheesecake filling onto the crusts. Refrigerate while you make the pudding layer.
  • Whisk the pistachio pudding mix and milk together for 2 minutes. Chill about 10 minutes to set.
  • Fold the remaining whipped topping into the set pudding until no streaks remain.
  • Spoon or pipe the pistachio pudding over the marshmallow cheesecake layer.
  • If desired, top with extra whipped topping, Campfire® Slimer marshmallows, and printable toppers.

Notes

  • If you have a piping bag, use it to build the layers quickly and neatly.
  • For a smoother “slime” layer, sift the dry pistachio pudding to remove tiny bits of pistachio; it’s optional if you prefer the texture.
  • I attached printable tags to small lollipop sticks before inserting them into the parfaits for an easy decoration.
