  • 3 ribs celery, thinly sliced
  • 4 garlic cloves, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • Sea salt and black pepper, to taste
  • 8 cups beef bone broth
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup pearl barley
  • 2 tablespoons Worcestershire sauce, low-sodium soy sauce, or coconut aminos
  • 2 tablespoons high-quality balsamic vinegar
  • 3 bay leaves
  • Fresh parsley for garnish

  1. Heat the oil over medium-high heat in a large stockpot or Dutch oven.
  2. Add the beef pieces and brown them on all sides. Remove the browned beef and set it aside.
  3. In the same pot, sauté the onion, carrots, parsnip, and celery for about 5 minutes until they begin to soften. Add the garlic, thyme, oregano, salt, and pepper, and cook for another minute, stirring.
  4. Add the beef bone broth, crushed tomatoes, pearl barley, Worcestershire (or alternative), balsamic vinegar, and bay leaves to the pot.
  5. Return the browned beef to the soup and stir to combine.
  6. Bring the mixture to a brisk boil, then reduce the heat to low. Cover and simmer for 40–50 minutes, or until the beef and barley are tender. Stir occasionally and adjust seasoning as needed.

  • 1 cup pearl barley
  • 2 Tbsps Worcestershire sauce, low sodium soy sauce, or coconut aminos
  • 2 Tbsps high-quality balsamic vinegar
  • 3 bay leaves
  • fresh parsley to garnish

Instructions

  1. Heat your oil to medium-high in a large stockpot or Dutch oven.
  2. Cook the pieces of meat until nicely browned on all sides, then set aside on a plate.
  3. In the same preheated pot sauté the onion, carrots, parsnip, and celery for about 5 minutes. Add the garlic and seasonings and cook for another minute.

  5. Gently stir the browned beef back into the soup.
