  • 1 Pound Asparagus Trimmed
  • 2 Cups Grape Tomatoes Halved
  • 1 1/2 Pound Skirt Steak or Flank Steak Thinly Sliced
  • 4 Tbsp Balsamic Vinegar
  • 4 Tbsp Olive Oil
  • 1 Clove Garlic Crushed
  • 1 Tsp Salt

Instructions

 

  • Lightly spray the air fryer or Ninja Foodi basket with olive oil spray.
  • Slice the steak against the grain into approximately six even pieces.
  • In a small bowl, mix balsamic vinegar, olive oil, crushed garlic, and salt. Stir lightly; the mixture will remain slightly separated but works well as a brush-on marinade.
  • Place about three asparagus spears on a steak slice, roll it up, and place the bundle in the air fryer basket.
  • Repeat until you have filled the basket. Depending on your air fryer size, plan to cook about three bundles at a time so they have room to crisp.
  • Add half of the halved grape tomatoes to the basket alongside the bundles.
  • Brush the steak rolls and tomatoes with the oil and vinegar mixture.
  • Air fry at 390°F (about 200°C) for 10 minutes, checking at the 5-minute mark. Adjust cooking time to reach your preferred doneness.
